Recipe Title:  Strawberry Frozen Yogurt Squares
   
1 cup crunchy wheat and barley cereal
3 cups fat free strawberry yogurt
1 (10 oz) bag frozen unsweetened strawberries
1 cup fat free sweetened condensed milk
1 cup light or fat free whipped topping
Line 8X8 inch baking pan with foil. Sprinkle cereal evenly on bottom of pan. Set aside.
Place yogurt, strawberries and condensed milk in blender; cover and blend until smooth. Pour the mixture over top of cereal. Cover with foil and freeze for 8 hours. Use edges of foil to remove from pan. Let thaw 5-10 minutes. Cut into squares, top with whipped topping. Serve and enjoy!!!

Why is this your favorite recipe?:  This is my favorite recipe because it is really yummy. It is super easy, healthy, and is really fast to make. It's a great snack to eat after I get home from school. I also love this recipe because I get to use the blender to make it!

Recipe Title:  Easy Beef Enchiladas
   
 
   
Brown one pound hamburger, drain fat, set aside. Soften corn tortillas in warmed oil using caution. Grate about half box of velveeta cheese together with half small onion in bowl. Roll together meat and cheese mixture in shallow pan. Spoon canned enchilada sauce over rolled enchiladas top with more grated cheese and bake approx 20 minutes in 375 degree oven. Enjoy!!!

Recipe Title:  Rise N' Shine French Toast Casserole
   
 
   
Ingredients:
1/2 cup melted butter
1 cup brown sugar
12 slices of bread
4 eggs
1 1/2 cup milk
1 teaspoon vanilla
Cinnamon, to taste

Directions:
1) Melt butter in microwave, stir in brown sugar.
2) Pour butter/sugar mix into bottom of 9x13 pan and spread around evenly.
3) Beat eggs, milk, vanilla, and cinnamon.
4) Lay single layer of toast in pan (6 slices).
5) Spoon half of egg mixture on bread layer.
6) Add second layer of toast.
7) Spoon on remaining egg mixture.
8) Cover and bake at 350 for 50 minutes (uncover for the last 15).
9) Sprinkle with powdered sugar and ENJOY!

Why is this your favorite recipe?:  French toast is my favorite breakfast dish. I love this recipe because I can make it on a Saturday morning and share it with my family. It's something you can make ahead and bake the next day or make it in the morning if you prefer. This casserole is easy to put together and taste good, too. I like to cook for my family on the weekends and try new recipes. It's fun to try new things and see what they taste like.

Preheat grill on med/low
Season wings garlic powder, onion powder, black pepper, curry powder. Toss in 2tbsp canola oil. Stir so all are coated.
Place wings side by side on grill. Cook until brown, flip. Cook until brown. Takes about 7 tob10 minutes per side.
Remove wings from grill when done and toss with your favorite sauce, or dip on the side!! YUM!!

Recipe Title:  3 Bean Chili
   
 
   
3 Bean Chili

1 Table spoon of vegetable oil, 2 med. stalks of celery chopped, 1 med. bell pepper chopped, 1 med. onion chopped, 2 cloves of garlic finely chopped, 1 - 28 oz. can of diced tomatoes undrained, 1 - 15 oz. can spicy chili beans undrained, 1 - 15 oz. can kidney beans drained and rinsed, 1 - 15 oz. can of black beans drained and rinsed, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1 teaspoon finely chopped chipotle chili in adobo sauce, 1/2 teaspoon of adobo sauce from can of chipolte chilies. In large dutch oven, heat oil over medium high heat, add celery, bell pepper, onion and garlic. Cook and stir 3 minutes. Add remaining ingredients. Mix well. Heat to a boil. Reduce heat, cover and simmer for 30 -40 minutes; stirring occasionally until vegetables are tender and flavors are blended.

Why is this your favorite recipe?:  This is my favorite recipe because I made it for the Brazos County 4-H Food Show and loved it. This is a budget friendly meal with lots of protein that I love. It tastes awesome and there's never any left over. It's easy to make and it makes the whole house smell yummy. It's healthy with vegetables and beans.

Recipe Title:  Jackson's Eclair cake
   
2 (3.40z) pkgs. Vanilla Instant pudding
3 1/2 c. whole milk
1/2 c. Nutella
12 oz.cool whip (thawed)
2 pkgs. graham crackers
36 fresh strawberries
ready to use milk chocolate frosting (slightly heated for 20-30 sec. on 1/2 power)

Blend milk + vanilla pudding packets for 2 min. Stir in Nutella until evenly combined. Fold in cool whip. In a 9x13 pan, layer graham crackers to cover entire bottom of pan. You may need to cut and shape crackers to fit nicely. Pour half of pudding mixture on top and spread evenly. Arrange half of the sliced strawberries covering the pudding entirely.

Repeat the process, covering the strawberries with graham crackers, and cutting and shaping the graham crackers as needed to cover completely. Pour remaining pudding over graham crackers and then add another layer of strawberries.

Cover the strawberries with a final layer of graham crackers with the bumpy side down, to create a smooth surface. Cut and shape the graham crackers to cover the surface completely. Heat frosting for 20-30 seconds at half power and stir until smooth. The frosting should be like a glaze. Pour and spread the "glaze" over the top of the graham crackers. Chill overnight.

Why is this your favorite recipe?:  I like this recipe for a lot of reasons. It is easy to make, but looks like you worked really hard. Also it doesn't need the oven, so I can make it completely by myself. I also really like it because it only uses a little chocolate. I like chocolate, but not too much chocolate. And finally, my brother loves Nutella and strawberries, and so I like to make this for him!

Recipe Title:  Four Cheese Pasta Bake
   
 
   
Four Cheese Pasta Bake
16 oz uncooked whole grain penne pasta, 1/2 cup of butter or margarine, 2 cloves of garlic finely chopped, 1 teaspoon of salt, 4 1/2 cups of milk, 1 cup shredded of provolone cheese, 1 cup shredded mozzarella cheese, 1/2 cup of shredded parmesan cheese, 1/2 cup of shredded fontina cheese, 1/3 cup of chopped fresh parsley if desired, 1tablespoon of butter of margarine, 1 cup of panko bread crumbs
Heat oven to 350 degrees. Spray a 13X9 glass baking dish with cooking spray. Cook and drain pasta as directed on package. Meanwhile, in a 4 quart sauce pan or dutch oven, melt 1/2 cup of butter over low heat. Add garlic, cook for 30 seconds stirring frequently. With whisk, stir in flour and salt until smooth. Increase heat to medium, cook stirring constantly until mixture is smooth and bubbly. Gradually stir in milk; Heat to boiling, stirring constantly. Boil and stir one minute. Stir in cheeses. Cook until melted, stirring occasionally. Stir pasta and parsley into cheese sauce. Pour Mixture into baking dish. In a 6 inch skillet, melt 1 tablespoon of butter over medium high heat; stir in bread crumbs. Cook and stir until crumbs are golden brown. Sprinkle over pasta mixture. Bake uncovered, 20-25 minutes or until bubbly.

Why is this your favorite recipe?:  This is my favorite recipe because it tastes wonderful! I made this dish for the 4-H Brazos County Food Show as well as the 4-H District 9 Food Show this past year and placed first both times. I'm not a huge fan of cheese but this changed my mind. It smells amazing and always makes my family happy at the dinner table. It's healthy with whole grain pasta and budget friendly too!

Recipe Title:  Butter Chicken
   
 
   
Butter Chicken

Ingredients

• 2 eggs
• 1 cup Ritz crackers crumbs
• ½ teaspoon garlic salt
• Black pepper to tase
• 4 chicken breast halves
• ½ cup butter, cut into pieces

Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.
3. Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
4. Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.

Recipe Title:  Cool Cookies
   
 
   
Cool Cookies
1/4 c. cocoa
1 cube butter
1/2 c. milk
2 c. sugar

Bring these items to a bubbling boil for 4-5 minutes. Take off fire. Add 3 cups oats, 1/2 cup peanut butter, and 1 tsp vanilla. Mix well. Spoon into balls onto wax paper and let cool. Eat and Enjoy!

Why is this your favorite recipe?:  It is my great grandma's recipe and is my dad's favorite cookie. I love making it for him and our family. You have to time it just right or they come out too hard or to soft so it is fun to see how each batch comes out. They always make my family smile.

Recipe Title:  Double Chocolate Cake Balls
   
For Cake.
2 cups white sugar
3/4 cup unsweetened
cocoa powder
1 1/2 baking powder
1 1/2 baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup coconut oil
2 teaspoons vanilla extract
1 cup boiling water

Directions
Preheat oven to 350 degrees F.
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla. Mix for 2 minutes on medium speed stir in the boiling water. Batter will be thin. Pour evenly into prepared pans. Bake 30-35 mins. Or until batter tests done with toothpick. Cool in pans for 10, then remove to wire rack to cool completely.

For Frosting
1 stick butter
2/3 cup unsweetened cocoa powder
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

1. Melt butter. Stir in cocoa. Alternately add sugar and milk, beating to a spreadable consistency. Add small amount of additional milk if needed. Stir in vanilla

For Cake Balls
Crumble cake into large dish. Fold in all frosting until all combined. Lightly grease hands and form cake mixture into balls. Place cake balls on ungreased cookie sheet and cool in freezer about 30 mins. Store in airtight container in freezer.

Why is this your favorite recipe?:  I love to bake chocolate recipes, and this one is so easy and doesn't require a lot of dishes to get dirty. It tastes great and is super simple. Also you can use coconut oil instead of vegetable oil and it still tastes the same! What more could you possibly want?!

Recipe Title:  Meatloaf Patties and Smashed Potatoes with Barbecue Gravy
   
 
   
Meatloaf Patties:
1 pound lean ground beef
1/2 cup breadcrumbs
1 tsp cumin
1/2 tsp allspice
1/8 cup milk
1 beaten egg
1/4 cup diced onion
1 TB Worcestershire sauce
1 TB tomato paste
1 TB extra virgin olive oil
Combine the first nine ingredients and mix together. Form it into 4 oval-shaped patties. Add oil to nonstick skillet and turn on to medium-high heat. Add patties to skillet and cook for 5-6 minutes, flip, reduce heat, and cook for 10 more minutes.

Smashed Potatoes:
8 small red-skinned potatoes, quartered
1/2 cup sour cream
1/4 cup milk
2 TB butter
salt and pepper, to taste
Boil potatoes in a medium pot of salted water for 10-12 minutes, or until fork-tender. Drain the water from the pot. Add sour cream, milk, and butter and smash!

Barbecue Gravy:
2 TB butter
2 TB all-purpose flour
14 oz beef broth, low sodium
1 TB tomato paste
2 TB barbecue sauce
Melt butter in pan. Sprinkle in flour and cook over medium-high heat for 1-2 minutes, whisking constantly. Slowly add beef broth and continue to cook for 3 minutes. Whisk in barbecue sauce and tomato paste.

Serve meatloaf patties and smashed potatoes with barbecue gravy.
